What do your customer's purchase specification require? It's likely they require the 3.0 mm.
If so, you can approach your customer and indicate the schedule delay. They may elect to accept the reduced cladding, but possibly at some penalty to you, that you may be able to pass back to the plate manufacturer.
In reality, 2.7 mm is probably as good as 3.0 mm. But your customer is paying for and expecting to get 3.0 mm.
